American-style spare ribs

Ingredients

  • 2 kg spare ribs
  • 200 g brown caster sugar
  • 400 g ketchup
  • 2 tbsp mustard powder
  • 4 tbsp ground paprika
  • 200 ml apple cider vinegar
  • 150 g tomato juice

Instructions

  • To make the marinade, boil the tomato juice and vinegar and dissolve the caster sugar in the liquid.
  • Mix with the remaining ingredients.
  • Remove the membrane from the back of the spare ribs. (or ask this to your butcher)
  • Cook the spare ribs in the marinade until done. This depends on the thickness of your spare ribs.
  • Strain the marinade, reduce, and use it as a glaze for the ribs.
  • Preheat the smoker.
  • Smoke the spare ribs in the smoker for ten minutes.
  • Brush the spare ribs with some of the reduced marinade and place it in the oven or on the barbeque to lightly caramelize.
