Quiche with smoked salmon and leek

Ingredients

  • 240 gr flour Make sure you have some flour extra
  • 100 gr butter
  • 5 eggs, whole
  • 20 ml milk
  • 300 gr smoked salmon, thinly sliced
  • 750 gr leek
  • 10 gr butter
  • 50 gr crème fraîche
  • 2 gr salt
  • 1 gr white pepper
  • 1 lemon

Instructions

  • Knead the flour with the butter, 1 egg, milk, and a pinch of salt into a smooth shortcrust pastry.
  • Wrap the dough in foil and let it rest in the fridge for 30 minutes.
  • Preheat the oven to 200 ° C.
  • Cut the salmon into thin strips.
  • Remove the green from the leek. (in this recipe we only use the white parts of the leek)
  • Slice the white of the leek lengthwise.
  • Cut the leek into half-centimeter rings and wash them in plenty of cold water.
  • Braise the leeks in butter until soft, drain in a sieve.
  • Beat the other eggs with the crème fraîche.
  • Mix in the salmon and leek and season with lemon zest, salt, and pepper.
  • Roll out the dough and line the baking tin with it.
  • Pour in the filling and bake the quiche for about 30 minutes. the quiche is ready when you pierce your knife into the middle and nothing sticks to it.
